Thai Crispy Chicken

When the kids are at home I want to be with them playing board games and watching tv or movies, which then means me spending less time in the kitchen and I want to make something that’s like instant, tasty and filling. For that purpose this is a perfect and easy recipe. It takes about 45 mins to make including preparation time and serving. It's great you have such recipes that are convenient to me and take less time in the kitchen.


When the kids are at home you don't want to be doing all the work yourself. This is one of the recipes where the kids can help by mixing ingredients or helping to chop spring onions. It's great to get your kids involved in daily cooking tasks so they can learn new skills and improve their motor skills too. It also gives me the opportunity to bond with my kids and become a better friend and coach for them. Most of my life as a mother I have made sure that I do not let any opportunity of such kind be lost in any way, hence I try to incorporate every activity that I do with my kids.


I’ve made this recipe almost now for 3 years and every time I make it kids eat with the same enthusiasm as though I have made it for the first time. It is now one of the regular recipes I make when I am short of time or feeling tired after work. The quantities I'm sharing here with you all are for feeding roughly 5 to 6 People. I usually serve it with white boiled rice and stir-fried noodles. You can eat it on its own as well. I hope you will enjoy making this recipe with your kids and family as much as I have.




 



The Recipe


Ingredients




  • 2 Chicken Breasts cut in big cubes or strips

  • 1 tsp Black Pepper Powder

  • 1tbsp Soya Sauce

  • 1 tsp Chinese Salt

  • 1/2 tsp Salt

  • 1/2 tsp Red Chilli Powder and extra pinch

  • 1/2 Cup Cornflour

  • 1 Egg

  • 1 Cup Plain Flour

  • 1/4 Cup Ketchup

  • 1 Cup Sweet Chilli Sauce

  • 3 Thinly Sliced Spring Onions

  • Coriander to garnish

  • Oil to deep fry


Method


  1. In a bowl add chicken cubes/strips, flour, cornflour, salt, Chinese salt, Soya sauce, chilli powder, egg, black pepper powder and mix well then leave to marinate for 15 minutes.

  2. In a bowl add chicken cubes/strips, flour, cornflour, salt, Chinese salt, Soya sauce, chilli powder, egg, black pepper powder and mix well then leave to marinate for 15 minutes.

  3. In a small bowl add ketchup, sweet chilli sauce, spring onions and pinch chilli mix well

  4. In a big bowl add you fried chicken and pour sauce over it.

  5. Transfer to the serving bowl.

  6. Garnish with coriander and serve hot.


Serving Suggestions


  • You can serve with white rice or over a noodles bowl.


Variations


  • You can add BBQ sauce to the sauce to give smoky flavour.
